Orange, Ginger & Sesame Superfood Salad

As promised, here’s the recipe for my sesame superfood salad cups – the ones that I whipped up recently for a friend’s party. I served them in little paper cups with wooden forks. Yeah, my friends love me because I keep them healthy and happy.

Ingredients

For the salad
3 cups of mixed slaw (I used shredded red and white cabbage, carrot, kale and beetroot)
3 tbsp mixed ‘super’ seeds (I used sesame, sunflower, chia and pumpkin seeds)

For the dressing
1/2 cup tahini
2-3 tbsp freshly squeezed orange juice
2 tbsp raw apple cider vinegar
2 tsp orange zest
1 clove garlic, minced
1 tsp ginger, minced
salt and pepper to taste

Method

Simply combine all of the dressing ingredients in a jar with a screw tight lid and shake until well combined. You could also use a high-powered blender or food processor to whip this up. Place the shredded salad into a bowl, pour over the dressing and toss gently to combine. Next, transfer the salad into serving bowls (or little paper cups) and garnish with ‘super’ seeds and orange slices.
