Fully Raw Pink Lady, Pistachio & Jam Donuts


As I was stuffing my face with these indulgent sweet, salty, crunchy apple donuts, I couldn't help but imagine that this was what that original naughty Garden of Eden delight tasted like. Do y'all think that snake was a raw vegan? Either way, this is gonna blow your mind! If you like mixing your sweet and salty flavours, I suggest using salted pistachios – the combo is amazing! When I first heard of this 'substituting apples for donut batter' thang, I must admit, I was a bit sceptical... but I'm officially impressed. Go on, I dare you to take a bite...


6 crunchy pink lady apples
2 tbsp pistachios, shelled and roughly chopped

For the strawberry chia jam
2 cups strawberries, de-stemmed and halves
1/4 cup raw honey (optional)
2 tbsp white chia seeds
1 tsp lemon juice

For the frosting
1 cups cashews
1/4 cup coconut water
1 tbsp beet powder
3 tbsp coconut oil
1 tsp vanilla bean paste
1/4 tsp sea salt


Start with the frosting – throw all the ingredients into a food processor, or high-speed blender and blend until smooth and creamy. Transfer to a small bowl and refrigerate for around an hour until it firms up.

Next, let's work on the chia jam. Again, you simply take all the ingredients and blend. I like my jam chunky, so I just mash it with a fork, but it's up to you! Then refrigerate for half an hour to let the jam set.

Now, here comes the fun part. Core your beautiful pink lady apples and slice them into three layers. Set aside the middle layer and spread the remaining halves with jam. Sandwich them together and you have a cute little raw donut! Now, spread the pink frosting on top and sprinkle with pistachios. Then, take a bite... told ya! Mwah – deliciousness!
